Jo Ann Schimcek, 65, of Weimar passed away Monday, March 13 after a short battle with cancer.
She was born in Shiner on Oct. 23, 1957, to Johnnie and Martha (Raabe) Koncaba. As a child, she lived in Moulton, next door to her grandparents and aunt, uncle and cousins. In November 1970, Jo Ann’s dad passed away following a workplace accident. In June 1974, she moved to Schulenburg when her mom married Edwin Zapalac. Jo Ann graduated from Schulenburg High School with the class of 1976. On Aug. 21, 1982, she married Ronald Schimcek at St. Rose Church in Schulenburg.
Jo Ann enjoyed starting each day by praying the Rosary and tending to the family pets, RJ (miniature donkey) and Cali (cat). Over the years, she worked at several local restaurants, including Original Kountry Bakery, Pat’s Sweet Shop, Frank’s Restaurant and Sirilo’s Cafe. She was well-known for her baking skills, particularly meringue pies.
The funeral Mass was held Friday, March 17 at St. Michael Church in Weimar, with Rev. Wayne Flagg officiating. Interment followed at St. Michael Cemetery. Pallbearers included nephews Seth Valla, Randall Gallaher, Michael Navarro and Davey Vanicek and cousins Paul Zapalac and Allen Koopmann.
Jo Ann is survived by her husband Ronald of Weimar, daughter Megan of Pflugerville, sister Melinda Castilleja and husband Vincent of Pflugerville and stepmother Karen Zapalac of El Campo. She was preceded in death by her parents and stepfather.
